Spicy Beans & Grains

This fiery salsa packs a punch and is the perfect partner to our Rice & Grains rice! Garnish with a lime wedge if you like it cooler.

  • 2 Roma tomatoes, seeded and chopped
  • 1 medium red onion, chopped
  • 1 clove garlic, finely chopped
  • 1 tsp. lime juice
  • 1 tsp. vegetable oil
  • ¼ tsp. chipotle chilli powder


  • 1 tbsp. vegetable oil
  • 1 medium red pepper, chopped
  • 255g no-salt-added black beans, rinsed and drained
  • 255g no-salt-added dark red kidney beans, rinsed and drained
  • 170g sweetcorn
  • 1 jalapeno pepper, thinly sliced 
  • 2 pouches Uncle Ben’s® Rice & Grains Wholegrain & Quinoa
  • 170g light soured cream
  • Chipotle Chilli Powder, if desired
  • Coriander
  • Lime wedges


  1. In a medium bowl, stir together all salsa ingredients; set aside.
  2. In a large pan; heat oil over medium heat. Cook and stir peppers for 2 to 3 minutes or until softened. Stir in beans, corn and jalapeno pepper. Cook and stir 2 to 3 minutes until hot.
  3. Meanwhile, heat rice as directed on package. Stir rice into bean mixture. Continue to cook and stir 1 minute longer until heated through and ingredients are combined. (Add 1 to 2 tablespoons water to keep rice and beans moist, if needed.)
  4. Divide grain mixture evenly among 4 dinner plates. Divide salsa and soured cream among plates. Sprinkle with additional chipotle chili powder, if desired. Garnish with coriander and lime wedge.
